Blueberry Honey Bran Muffins

At a recent workshop, we served seaweed and honey bran muffins; guess which one people liked better?! You probably guessed it…the muffins were just a tad bit more popular than the seaweed!

These Blueberry Honey Bran Muffins are the trifecta - they’re delicious, nutritious, and convenient.

We have tried a lot of bran muffins and have been disappointed with their cardboard like texture and false claims of being healthy while laden with sugar and processed ingredients. This recipe has all the benefits of a good amount of fiber (4.7 grams each!) while being light, lovely and not overly sweet.

Wheat bran is the protective outer layer of wheat berries that is removed when wheat berries are processed into all-purpose flour. What a shame to get rid of a most nutritious layer!

Wheat bran is nutrient rich in minerals, plant compounds and fiber. It’s also a prebiotic, making it an important component for a healthy gut microbiome and digestion.

Many Americans have a hard time getting in enough of the recommended amount of fiber. These muffins will help you meet your daily requirement.

According to Harvard Health, “On average, American adults eat 10 to 15 grams of total fiber per day, while the USDA’s recommended daily amount for adults up to age 50 is 25 grams for women and 38 grams for men. Women and men older than 50 should have 21 and 30 daily grams, respectively.”

A few kitchen hacks to go along with this recipe

You can make plant-based buttermilk. Put 1 tablespoon of vinegar or lemon juice in a 1 cup liquid measuring cup. Then, fill to the 1 cup mark with a plant based milk such as unsweetened almond milk. Let sit 5-10 minutes and voila, you have non-dairy buttermilk!

Whilst you are making your plant-based buttermilk, you can also make plant based eggs in the form of chia seed eggs! Place 1 tablespoon of chia seeds in a small dish. Add 3 tablespoons of water. Stir and let sit for 5 minutes. You may want to give it another stir halfway through. The mixture will congeal. Use 1 T chia seeds for each egg you are substituting.
